New Mexico State University’s College of Agricultural, Consumer and Environmental Sciences will offer a free virtual demonstration to demystify the vast world of edible mushrooms.
The demonstration is open to the public and will take place from 10:30 to 11:45 a.m. Thursday, April 29, on Zoom. The event is part of a fungal biology class taught by Soum Sanogo, professor of fungal plant pathology, and a joint venture between the Department of Entomology, Plant Pathology and Weed Science and the School of Hotel, Restaurant and Tourism Management.
Sanogo and John Hartley, chef and HRTM college assistant professor, have held this event since 2013 as part of the experiential learning module “Fungi: The Good, The Bad, and The Ugly.”
“Owing to the situation with the COVID-19 pandemic and restrictions on in-person gatherings, we will present our 2021 demonstration via Zoom, with assistance from HRTM program coordinator Andrea Arrigucci,” Sanogo said.
The event will start with a prerecorded video of Hartley giving a cooking demonstration, Sanogo said. Hartley also plans to take questions from Zoom participants about recipes and cooking techniques. Sanogo’s student will then discuss the nutritional and medicinal aspects of mushrooms and take questions.
Ximena Zamacona, owner of Full Circle Mushrooms in La Mesa, New Mexico, helped make this year’s event possible by providing some of the mushrooms for the menu, Sanogo said.
